I make a very simple version of Poppy Seed Chicken that is so good!
Makes one 8x8 or 9x9 pan
1 can cream of mushroom soup
4 oz. sour cream
1 large chicken breast
Poppy seeds
1 package Ritz crackers
Directions:
Boil chicken breast until no longer pink in the center and shred
Mix cream of mushroom soup and sour cream together in baking dish
Add poppy seeds, shredded chicken and stir
Bake in the oven at 400 degrees for 15 minutes
When mixture is bubbling around the edges, take out and add crushed Ritz crackers to the top
(1 tube of Ritz should cover small baking dish)
Sprinkle more poppy seeds on crackers
Place back in the oven and bake for 5-10 minutes or until crackers become golden brown
Serve over white rice
