What I'm Loving Wednesday

Creamy Chicken and Bow tie Pasta

Tonight I put a few recipes together to come up with this one.

Here are the ingredients


1 tblspoon olive oil
 2-4 chicken breasts
1 tspoon garlic
2 tspoon dried basil leaves
2 tspoon dried oregano leaves
2 cans (14.5 oz each) diced tomatoes
1 1/2 cups heavy cream
1/2 tspoon salt
1/2 tspoon pepper
1/4 tspoon crushed red pepper (optional)
1/2 cup red bell pepper
bowtie pasta
parmesan cheese
mozzerella cheese

Season chicken and grill (I prefer McCormick chicken seasoning)


After chicken is grilled and still slightly pink in the center, cut into pieces and put it into heated pan with olive oil.


Add chopped oregano, basil and garlic and cook for 5 minutes

(These are the basil leaves I grew in my garden last summer and dried)

Stir in tomatoes, heavy cream, bell pepper, salt, pepper and red pepper


Heat to boiling and reduce heat to medium

Simmer for 15-20 minutes or until mixture thickens

While simmering boil water and add bow tie pasta and cook al dente


Remove tomato and chicken mixture from heat and add Parmesan cheese and mozzarella.

Add pasta to mixture and stir


*If chicken and sauce mixture is too thin feel free to spoon as much as you would like to the pasta
