Broccoli Potato Soup

Today I decided to use some things in my refrigerator and pantry that would be going bad soon. I had some broccoli and potatoes that needed to be used, as well as heavy cream.

Ingredients:

1 small head of broccoli
2 russet potatoes washed and dried
1 cup chicken broth
1 cup heavy cream
1/2 cup milk
2 cups shredded cheddar cheese
salt and pepper to taste



Directions:

Pierce potatoes with a fork, wrap in a paper towel and microwave for 10 minutes


Peel skin off potatoes and chop



Meanwhile, cut up and steam broccoli


Add broccoli, chicken broth,  cream, milk, potatoes and cheese to pot.



Bring to a simmer and turn to medium

Allow to simmer for 30 minutes or until mixture thickens. 

Salt and Pepper to taste



Top with cheddar cheese, bacon bits or sour cream

Serve and Enjoy !

  2. It is incredibly easy! It also really good with steamed, chopped asparagus in it too.
