Mexican Pizzas

There are very few things I love more than a good Mexican Pizza from Taco Bell. Tonight I decided to make my own!

Ingredients:
8 small flour tortillas
vegetable oil for frying
1 lb ground beef
taco seasoning
1 can refried beans
enchilada sauce
shredded cheese
tomatoes
green onions

Directions:
Brown 1 lb. of ground beef

Drain and add taco seasoning

Add 1 can of refried beans to pan and stir until warm

Heat oil in a small skillet

Fry each tortilla on both sides until slightly brown

Place fried tortillas on plate and smash until all air bubbles are out and it's flat

Start with 1 tortilla and spoon meat mixture on to it to cover

Place 2nd tortilla on top

Spoon on enchilada sauce until the top is covered

Cover with cheese, diced tomatoes and green onions

Bake at 400 degrees for 10 minutes or until cheese is melted

Serve and Enjoy!
